I have been wanting to try a MckMama Recipe for the longest time. So Friday night, C and I went to Publix to get all the ingredients for MckMama's FAMOUS MckPancakes.Since Coop LOVES pancakes, I thought I would try it. This way I am "sneaking" a banana, yogurt, honey, and FLAX SEED MEAL into his pancakes. I read up on Flax seed and it is suppose to be really healthy for you. But today my friend Jenn told me that it constipates you. Oh Geez, a constipated 2 year old is the last thing I need. But I think that is if you eat A LOT of it. Which we will not.

I had to substitute peanut butter for the almond butter she says to use. Also I had to use regular veggie oil instead of Flax seed oil. Other than that, it's all MckMama.

Summer Fun 2009
Our Summer is flying by!! We have been having fun and loving life! Here are a few pictures of our summer so far...

Coop took swim lessons at the YMCA this summer. My little man loves the water!

Not me Monday...
It's that time again to confess all of the things that you most certainly DID NOT DO over the last week. I keep meaning to write all of them down, but I always forget.
First of all, I did not let my 2 year old sit on the counter top NAKED while I cooked dinner the other night. See we are in the middle potty training and Mommy needs to buy some more tiny under ware for C.
Last week, for my birthday, I DID NOT eat cake at 9:30 in the morning. NO, not me!
Last Thursday, my sister in law took C and I out to dinner for my bday at a local Japanese restaurant. As we were leaving, C was looking at the fish, his puffy sticker flew off his shirt and the $1000 fish proceeded to eat it. I DID NOT grab my son and run out the front door! NOT ME!
And on my bday night, Tuesday, I most certainly DID NOT party a bit too hard and try to relive my college days. Well that is a bit of an over exaggeration. But seriously I am 31 now, NOT 21.
Last but not least, on Friday night I put C to bed in his crib and had "mommy" time. Then around 11:30, I MOST CERTAINLY DID NOT go into C's room, get him out his crib was he was sound asleep, and put him into my bed. I just missed him so much for some reason and wanted to be close to my little man. No NOT ME!
Those are just a FEW things that I DID NOT do this past week. If I thought harder, I am sure that I could think of a few more, lol.

YUMMY OREO BALLS
THE BEST DESSERT FOR THAT EMOTIONAL TIME OF THE MONTH ;-)
1 package of oreos
1 package of cream cheese
Dark Chocolate
Smash oreos, using your PAMPERED CHEF CHOPPER
Combine cream cheese and oreos in the BATTER BOWL using your MIX and SCRAPPER
Roll into balls
Put in fridge over night OR freezer for 1 hour if you NEED THEM NOW!
Then coat in melted chocolate
Place on wax paper on cookie sheet
Put in freezer for 1 hour
Store in fridge
I promise you these things are addicting!! My friend made them for July 4th and I could not stop eating them!!

NOT ME Monday!
Welcome to Not Me! Monday! This blog carnival was created by MckMama. You can head over to her blog to read what she and everyone else have not been doing this week.
First of all a big THANK YOU to MckMama for thinking of such a wonderful way to vent about the things that you most certainly DID NOT do over the past few days :)
First of all, I am most certainly NOT blogging during my work hours! Shhh!
Ok, here we go...
To begin our July 4th festivities, I most certainly DID NOT let my 2 1/2 year old stay up 2 1/2 hours past his bedtime just to see the fireworks on Wednesday. And on that same night, I DID NOT let him eat a mini ice cream sandwich even though he refused to eat his Chick-fil-A nuggets. OH NO NOT ME!
On Saturday, Coop and I went to a neighborhood cookout. After we ate, we went to the pool. Coop with all floatie gear on DID NOT jump in the deep end like the big boys. And I DID NOT freak out the first time! Thank goodness all the adults were in the deep end and jumping in with C to help him out.
Cooper and I DID NOT get home at 8:00 from the pool and I DID NOT just put him right in his jammies and sit on our back porch WITHOUT a bath. NOT ME! And that same night, I DID NOT let my son sleep in my bed. NOT Sunday night either. Nope NOT ME!
Oh, on July 4th, my friend Kate made these mouthwatering chocolate oreo balls, that I most certainly DID NOT eat about 8 of in a 6 hour period. There were just THAT GOOD!!

My story...Why Pampered Chef??
As a single mother of a 2 year old boy, I was looking for ways to earn extra income to help with monthly expenses and to put into my savings account. After hosting a party in March of 2009 for an old high school friend, I was able to apply some of my "FREE" product money towards my kit. One of my concerns was that I was unsure that I would be able to work PC alongside my full time job and still have time for Cooper. ONE OF the wonderful things about PC is that YOU decide how much or how little you want to work each month.Who wouldn't LOVE to be their own boss?! Since March my life has been more fulfilled. I feel like a weight has been lifted off my shoulders just knowing that I can make extra money each month. Most consultants earn between $90-$100 per show. By just having 4-5 shows a month, you can earn $400-$500 extra a month! What could YOU do with that money?? For some of you, that could be a car payment, Summer vacation, or cash for Christmas presents. How awesome would it be to pay for Christmas in cash!!
I have never been in sales until now. I can honestly say that I LOVE being a Pampered Chef consultant! It is truly a lot of fun!
